It's only natural for the minds that think up restaurant concepts to go via the pop up world first. So here's one in anticipation of Pilgrim; a space to be watched. It's inspired by an age-old pilgrimage along the Camino - a 796km journey between St Jean Pied de Port and Santiago de Compostela - wowza. The menu focuses on meat and seafood, and puts a modern twist on all the regional dishes along the way. Head chefs Dave Bone and Anthony Power have put together a 6-course tasting menu mixing quality Galician produce and fine British ingredients. We're not sure exactly what the menu has in store but there's rumour of Iberico pork short rib, pulpo (octopus) and torta de Santiago. Oh and there'll be sherry, lots of it.
